What's your favorite ravioli filling?!
I've never tried the spinach and ricotta, but I'll bet it tastes great.
My personal preference is for the basic ricotta filling.
I was taught by my (Irish) first mother-in-law how to make ravioli from scratch!
Squash. Really good with melted butter and roasted nuts. I think pecans or walnuts are classic.

for me it will have to be beef
