Why does milk curdle when mixed with lemon juice?!


Question: I don't know why, but when milk and acids (like lemon juice) are mixed together they coagulate and create solid curds and liquid whey.

Curdling is done on purpose to make cheese.

because of the acidity in the lemon juice. when it mixes with the milk, it alters the chemical makeup of it, causing it to curdle.

a chemical reaction takes place between the acid and the milk.

because the citrus acids in the lemon juice mix with the dairy in the milk. ive done it before.. and then my friend tricked me into drinking it.. worst few days of my life.. *puke*

because of the culture of the milk and the acid of the lemon that dont match
